Why this, and why now
Every trip to Japan leaves me amazed — the taste, the quality, the care behind even the smallest jar or bottle. I couldn't live there and eat like that every day, so I asked myself: why not bring it home instead? Cook with it, share it, keep a little piece of Japan in my own kitchen. That question is what led me to start Hidden in the Aisle.
Hidden in the Aisle exists because the import model in this market rewards breadth. Large distributors carry the national brands because volume works and margins are predictable. Nobody is incentivised to find a shoyu brewery with eleven employees, work out how to get four cases out of Japan, and then teach anyone what to do with it.
That is not a gap in demand. Singapore has one of the most curious food-buying publics anywhere. It is a gap in effort — and in explanation.
So we start where explanation works best: live, cooking, answering questions in real time. Once enough people know what these things are for, the shelf follows.
